grain and gluten free cinnamon toast crisp cereal..or crackers..or heck just eat em!

Got this recipe from http://www.agirlworthsaving.net/2013/03/paleo-cinnamon-square-crunch-cereal.html. Only difference I made was that instead of using another piece of parchment on top(actually I did, but everything stuck to it, so I ditched it and improvised) by spreading it really thin, then baking it for 10 minutes. I pulled it out of the oven and then used my small rubber rolling pin to flatten it out evenly and then cut it into squares and then baked the last 10-15 minutes! Oh my word, this is soooo tasty!

Blend in food processor or vitamix, 1 cup unsweetened coconut, 1/2 cup raw sunflower seeds, 1/4 cup chia seeds, 1 Tablespoon cinnamon, 1/4 tsp celtic sea salt. This will make a flour like substance.

Add 1/4 cup pure maple syrup and an egg. Stir.

spread on pan covered in parchment til less than 1/4 inch thick..thinner than this. (this is where I tried to put on other piece of parchment and it stuck and then tried wax and it stuck so I just spread it as thin as I could and baked it for 10 minutes. Then when I pulled it out, I flattened it with rolling pin lightly to make even.

Use Pizza cutter to cut into squares..believe me these can be crackers so go with what size suits you! after cutting bake additional 10 -15 minutes til crispy.

Recipe type: Paleo Cereal

Serves: 8

Ingredients
•1 cup of coconut shreds
•½ cup of sunflower seeds
•¼ cup of chia seeds
•1 tbsp of cinnamon
•¼ tsp of sea salt
•¼ cup of maple syrup
•1 egg

Instructions
1.In a blender or food processor, add the coconut shreds, sunflower seeds, chia seeds , cinnamon and sea salt. Pulse until you have a flour.
2.Place the flour in a small mixing bowl and add the maple syrup and egg.
3.Blend well.
4.Scoop the mixture onto a piece of parchment paper and cover with another piece of parchment paper.
5.Roll until you have a rectangle, roughly 8″ x 10″ and ¼” thick.
6.Remove the top sheet and pre-cut the dough into ½” x ½” squares.
7.Place the parchment paper on a baking sheet and cook at 325 for 20 – 25 minutes until dark brown.
