I am in awe of the cruciferous cauliflower! One of the things not allowed in this paleo/primal way of life is rice…and wheat and white potatoes……… Not that I am complaining because hey…bacon is included!!
First of all, I braved making the faux mashed potatoes made out of cooked cauliflower…which I had known about for years (Weight Watcher Friendly), but had never tried because frankly, I thought it was ludicrous that cauliflower could in anyway resemble the deliciousness that is mashed potatoes! But I had some cauliflower left over and I also had some pork roast with a delicious gravy and I decided to give it a go! IT WAS AMAZING!
Faux “Potatoes”
head of cauliflower steamed, drained and patted dry
2 Tablespoons of Cream cheese
Salt and Pepper
garlic powder*optional for some, never optional for me!!
Place all ingredients in a food processor and go until it is consistency of mashed potatoes…yep. that is it!
Next on the list is rice…well…you guessed it, cauliflower, raw and pulsed in a blender…makes rice substitute… Now, I don’t know about you but I love fried rice…and this fit the bill COMPLETELY!
FRIED “RICE”
1 1/2 cups of “riced” cauliflower (it only took a few large florets) do not over process…keep it around the size of orzo.
1 1/2 cups rainbow slaw (available in produce section, usually broccoli, cabbage, carrots and cauliflower, but hey..if you want to chop your own, be my guest!)
1 green onion sliced
1 tsp. minced garlic
1 Tablespoon toasted sesame oil
1/4 tsp ginger
1 large egg
1 Tablespoon wheat free tamari sauce
place oil in wok(or skillet) sautee garlic til fragrant. Add in vegetable slaw minus green onions. Add ginger and a bit of salt and pepper. Sautee for a few minutes. Push veggies to the side and add egg on free side and scramble. Add cauliflower and green onions and tamari and stir all together and enjoy!
*I added some leftover green beans and turkey from the other night and wow…delicious!!
Next cauliflower adventure is to make pizza crust with cauliflower and cheese…yes..google it!
