cookies and milk…without dairy and grains???? oh yeah, baby!!

Pretty sure my almond milk recipe is on here already. March 7 post, I believe.  “Why not buy it from the store?” …you might ask? Have you read the back of the carton? Question answered! Carrageenan, among other additives, has been linked with cancers and other problems with gastrointestinal tract. Sadly, it is present in many so called “healthy” milk alternatives. Now, I am not personally anti-dairy, I just don’t care for the taste of milk. But almond milk, MY almond milk, I enjoy a small glass, a splash in my morning cup of joe, and especially on my recent creation, Cinnamon Flax Cereal….better known to me as the REAL breakfast of champions!……will share the recipe tomorrow, but as a teaser…here is a picture!

But, I just did an experiment cookie recipe that turned out fantastic and is so stinking easy, it is ridiculous!!

Chocolate Coconut Delights

2 tbsp. Butter, softened (or ghee)*yes, I know this is dairy and if you must, replace with ccoconut oil

2 eggs

2 tbsp. Pure grade b maple syrup

1 tsp. Coconut sugar crystals(optional if you want a sweeter cookie)

1/2 tsp. Vanilla

1 tbsp. Almond meal/flour

1 cup organic unsweetened shredded coconut

1/4 tsp. Baking soda

1/4 cup finely chopped nuts (optional…may use dried fruit as well, but i used pecans)

Whip together butter, eggs, maple syrup, vanilla and sugar. Add in remaining ingredients. Preheat oven to 350. Let batter sit while preheating. Using medium cookie scoop, place on parchment covered cookie sheet and bake for 13-15 minutes.

Makes 18 cookies
