Jesus, make it warmer…

This has been by far, the worst winter in my life…and I am old. It is ridiculously cold and the snow is still piled over 2 and a half feet high in my yard. We are thankful today because it is supposed to finally reach the 30s in the next day or so…frigid…just so frigid.
What tends to happen during this part of the winter season is a bit of a gray blanket over everyone’s emotions. This is a dingy, dark gray.
The older I get the more my body begs me to move south. These bones just can’t take it anymore.
Something snapped in me today. As I woke up and looked at the single digit on the thermometer outside, I said aloud…”God please, make this the last day!” I meant every word of that simple prayer. Later, I saw an adorable video online of a little 4 year old who just wanted to be able to stay out and play in the snow, but the cold was getting to him and he threw back his head and yelled to the heavens…”JESUS MAKE IT WARM!”…I laughed and gave a whole hearted “AMEN”.
A little while ago, I was reading a post on Facebook regarding a little boy named Grayson, about the same age as the boy in the video praying for warmth, only this little boy is fighting cancer…he is not doing well. He is in much need of prayer…and mercy…and a touch from the One who created him. It made me realize that my hard cold ridiculous. Here is a child who hasn’t even gotten a chance at life, whose family isn’t certain if he will ever GET that chance at life, and I am whining to please make it the last day…of cold weather. And yet oddly, in my heart of hearts, I know that my God isn’t offended by my prayer…He knew the words before they came out of my mouth. He also knew that my heart would be “shifted” when I read of little Grayson’s plight. and now, I pray…”Lord, please don’t make it Gray’s last day! Please lift up the spirits of his amazing parents who struggle in this dark place. Meet them there. Please surround them with all of the strength, peace and comfort to face whatever is in store. I believe Lord, that you can bring that family a miracle. I also believe that only you know how this will end. Heal him Lord. In your name I pray. and thank you Lord…for making my heart just a wee bit warmer today. I love you…amen.”


Been a while…

Was doing so great…really. Then I went on vacation… nuff said.
The truth is that although I have been still cautious about quantities..I have let some of the old crap back in. Just enough to make me FEEL like a CRAP again!!! haven’t gained weight but I feel awful!
So today, I made a batch of my cinnamon crunch cereal and a batch of my own almond milk and today is a new start!

grain and gluten free cinnamon toast crisp cereal..or crackers..or heck just eat em!

Got this recipe from Only difference I made was that instead of using another piece of parchment on top(actually I did, but everything stuck to it, so I ditched it and improvised) by spreading it really thin, then baking it for 10 minutes. I pulled it out of the oven and then used my small rubber rolling pin to flatten it out evenly and then cut it into squares and then baked the last 10-15 minutes! Oh my word, this is soooo tasty!

Blend in food processor or vitamix, 1 cup unsweetened coconut, 1/2 cup raw sunflower seeds, 1/4 cup chia seeds, 1 Tablespoon cinnamon, 1/4 tsp celtic sea salt. This will make a flour like substance.

Add 1/4 cup pure maple syrup and an egg. Stir.

spread on pan covered in parchment til less than 1/4 inch thick..thinner than this. (this is where I tried to put on other piece of parchment and it stuck and then tried wax and it stuck so I just spread it as thin as I could and baked it for 10 minutes. Then when I pulled it out, I flattened it with rolling pin lightly to make even.

Use Pizza cutter to cut into squares..believe me these can be crackers so go with what size suits you! after cutting bake additional 10 -15 minutes til crispy.

Recipe type: Paleo Cereal

Serves: 8

•1 cup of coconut shreds
•½ cup of sunflower seeds
•¼ cup of chia seeds
•1 tbsp of cinnamon
•¼ tsp of sea salt
•¼ cup of maple syrup
•1 egg

1.In a blender or food processor, add the coconut shreds, sunflower seeds, chia seeds , cinnamon and sea salt. Pulse until you have a flour.
2.Place the flour in a small mixing bowl and add the maple syrup and egg.
3.Blend well.
4.Scoop the mixture onto a piece of parchment paper and cover with another piece of parchment paper.
5.Roll until you have a rectangle, roughly 8″ x 10″ and ¼” thick.
6.Remove the top sheet and pre-cut the dough into ½” x ½” squares.
7.Place the parchment paper on a baking sheet and cook at 325 for 20 – 25 minutes until dark brown.

Crazy for Cauliflower!

I am in awe of the cruciferous cauliflower! One of the things not allowed in this paleo/primal way of life is rice…and wheat and white potatoes……… Not that I am complaining because hey…bacon is included!!

First of all, I braved making the faux mashed potatoes made out of cooked cauliflower…which I had known about for years (Weight Watcher Friendly), but had never tried because frankly, I thought it was ludicrous that cauliflower could in anyway resemble the deliciousness that is mashed potatoes! But I had some cauliflower left over and I also had some pork roast with a delicious gravy and I decided to give it a go! IT WAS AMAZING!

Faux “Potatoes”

head of cauliflower steamed, drained and patted dry

2 Tablespoons of Cream cheese

Salt and Pepper

garlic powder*optional for some, never optional for me!!

Place all ingredients in a food processor and go until it is consistency of mashed potatoes…yep. that is it!

Next on the list is rice…well…you guessed it, cauliflower, raw and pulsed in a blender…makes rice substitute… Now, I don’t know about you but I love fried rice…and this fit the bill COMPLETELY!


1 1/2 cups of “riced” cauliflower (it only took a few large florets) do not over process…keep it around the size of orzo.

1 1/2 cups rainbow slaw (available in produce section, usually broccoli, cabbage, carrots and cauliflower, but hey..if you want to chop your own, be my guest!)

1 green onion sliced

1 tsp. minced garlic

1 Tablespoon toasted sesame oil

1/4 tsp ginger

1 large egg

1 Tablespoon wheat free tamari sauce

place oil in wok(or skillet) sautee garlic til fragrant. Add in vegetable slaw minus green onions. Add ginger and a bit of salt and pepper. Sautee for a few minutes. Push veggies to the side and add egg on free side and scramble. Add cauliflower and green onions and tamari and stir all together and enjoy!

*I added some leftover green beans and turkey from the other night and wow…delicious!!

Holy Hannah! I just had an epiphany! As I was making preparations for dinner today, it occurred to me that I am spending an inordinate amount of time in the kitchen…not that that is a bad thing…but the next thought was, “hey, when you can’t have processed food anymore, then you must become the processor!” NEXT THOUGHT…THANKS MOM!

I have been experimenting a lot lately, and as I was actually washing a few dishes, it occurred to me how many times I saw my mom standing over a pot of something…when food was real, and she prepared it. It is a lost art these days, and although I come from a long line of “kitchenistas!” including my mom, my dad, my grandma and even my grandpa, this new way of cooking and eating is kind of refreshing…and tiring…but worth every minute! Will share more soon, just had to send this shout out to my mom!


cinnamon flax crunch…the paleo breakfast of champions!! *Updated flavor…CHOCOLATE*

So, I was whipping up another batch of my “cereal” today and I remembered that I had said I would post it the other day…my bad! I actually tried yesterday, but when the hubby fixed my computer from its nasty infection, he loaded me up with Windows 8. NOW, that doesn’t sound like a reasonable excuse, but holy heavens, it is soooo different, and apparently new enough that some of my programs are still having issues with compatibility. Let’s just say I had to stop before someone got hurt. Alas, a reboot corrected the photo issue with dropbox.

Mix 1 cup golden or regular flaxseeds with cinnamon, vanilla and water..let sit til thickened  (20 minutes or so)

Takes some patience to spread evenly but once it is gelled enough, a back of a spoon works fine. I also added about 1/4 cup chia seeds.

Bake 275 and flip every 15 minutes, gradually breaking into smaller pieces.

Cinnamon Flax(chia) Crunch

1 cup flax seed(I used golden)

1/4 cup chia seeds (optional, if used add additional 1/4 cup water)

1/2 cup water

1 tsp. vanilla

1 tsp. cinnamon

Let sit for at least 15 minutes or until it looks like this.


Spread into pan until very thin. Bake 275F for 50-55 minutes. Every 15 minutes flip and break into smaller pieces.

After 45 minutes and when broken into flake size pieces, add nuts and/or dried fruit and bake for additional 10 minutes. Cool and put in airtight container.

I enjoy mine with almond milk! and banana!

I tried a new flavor of this by adding a Tablespoon of cocoa in lieu of the cinnamon and also added some cacao nibs for a chocolate cereal. After the first flip I sprinkled on some unsweetened FLAKED coconut on entire sheet. added almonds in last 15 minutes…OMG it is heavenly!

cookies and milk…without dairy and grains???? oh yeah, baby!!

Pretty sure my almond milk recipe is on here already. March 7 post, I believe.  “Why not buy it from the store?” …you might ask? Have you read the back of the carton? Question answered! Carrageenan, among other additives, has been linked with cancers and other problems with gastrointestinal tract. Sadly, it is present in many so called “healthy” milk alternatives. Now, I am not personally anti-dairy, I just don’t care for the taste of milk. But almond milk, MY almond milk, I enjoy a small glass, a splash in my morning cup of joe, and especially on my recent creation, Cinnamon Flax Cereal….better known to me as the REAL breakfast of champions!……will share the recipe tomorrow, but as a teaser…here is a picture!

But, I just did an experiment cookie recipe that turned out fantastic and is so stinking easy, it is ridiculous!!

Chocolate Coconut Delights

2 tbsp. Butter, softened (or ghee)*yes, I know this is dairy and if you must, replace with ccoconut oil

2 eggs

2 tbsp. Pure grade b maple syrup

1 tsp. Coconut sugar crystals(optional if you want a sweeter cookie)

1/2 tsp. Vanilla

1 tbsp. Almond meal/flour

1 cup organic unsweetened shredded coconut

1/4 tsp. Baking soda

1/4 cup finely chopped nuts (optional…may use dried fruit as well, but i used pecans)

Whip together butter, eggs, maple syrup, vanilla and sugar. Add in remaining ingredients. Preheat oven to 350. Let batter sit while preheating. Using medium cookie scoop, place on parchment covered cookie sheet and bake for 13-15 minutes.

Makes 18 cookies
